Isomalt is a sugar substitute and a sugar alcohol (polyol) derived from sucrose. It is most commonly used in confectionery and cake decorating to create intricate, sugar-free decorations that are both beautiful and durable.

 

Unlike regular sugar, isomalt has a very high resistance to crystallization, which makes it perfect for a variety of decorative applications. It also has a low hygroscopicity, meaning it doesn't absorb moisture from the air as easily as sugar. This prevents the decorations from becoming sticky or cloudy over time, giving them a much longer shelf life.
